Roasted Cauliflower with smoke & fire peanut butter
Delicious served with preserved lemons and roasted vegetables.
WHAT YOU NEED
- 1 head cauliflower ¼ cup + 1 tbsp olive oil
- 3 tbsp Fix & Fogg Smoke and Fire peanut butter
- 1 tsp lemon zest
- 2 tbsp finely chopped parsley
- 1 tbsp finely chopped mint
- 1 tbsp olive oil
Preheat oven to 180°C. Cut the leaves and the stalk away from the cauliflower, keeping it intact. Pour ¼ cup of olive oil over the cauliflower, sprinkle generously with salt, cover with aluminium foil and bake 45 minutes.
Meanwhile, combine peanut butter, parsley, lemon zest and mint with 1 tbsp olive oil.
After 45 minutes, remove cauliflower from the oven, uncover and spread with the Smoke and Fire peanut butter rub. Bake for another 15-20 minutes.
