Peanut Butter Granola

Crunchy peanut butter granola


  • 2 cups oats
  • 1 cup shredded coconut
  • Pinch of salt
  • 1 banana
  • 1/2 cup Fix & Fogg Super Crunchy peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 medium baking tray lined with baking paper


In a large bowl combine oats, coconut and salt. In a small bowl mash the banana. Set aside.

In a medium pan combine the peanut butter, honey or maple syrup, coconut oil and vanilla extract. Heat over a medium heat until everything had melted and combined. Add the mashed banana to the peanut butter mixture and stir to combine.

Pour the peanut butter mixture into the oats and mix until the oats are completely covered in the mixture.

Transfer granola mixture into the baking tray and bake at 180 degrees for about 20 minutes, removing the tray every 5 or so minutes to stir to stop the edges burning. When it’s a nice dark golden brown take out of the oven.

Once the oven is switched off and the heat inside has reduced a bit you can pop it back in to crisp up in the residual heat. Leave until the oven had completely cooled down.
